I am trying to learn to eat in my apartment and to cook more meals that are budget friendly. That being said I have been meaning to post this for a few days but have been working hard on cards and finishing up orders. (thank you all)
My dear friend Morissa came for a visit last week and it was wonderful AND a good excuse to cook in.

Morissa... okay the food wasn't all that bad - I just think people weren't psyched that I was snapping away.
Yes I fixed chicken on a stick... and yes it was frozen... but the potatos were pretty yummy.
So yesterday I survived Donita's baby shower. I have to say that it was an incredible success. It was a beautiful day, the sun was shinning and the crowds were out. Everything went really nicely and the shower was so nice to see how many people care about Donita and Robert. She recieved some very nice things and some lovely heartfelt gifts. My favorite gift she opened was the one from my little sister. Deidre had made her a very cute orange and white hat. I spoke to Deidre about it this morning and she was so proud that she was able to make baby Amelia something of her very own. Lovely indeed.
My cassarole had favorible results. I wouldn't say it was my favorite thing that I have ever made, but several people asked for the recipe. Incredibly easy to make and not to pricey really. It was a pineapple cheese cassarole, Interesting I know.
But most importantly it was so nice to see how many people came for Donita. And not just peeps from Springfield. Several of her friends from Nashville came for the shower and it reminded me how good of a person Donita is. Amelia is very lucky to have the parents she will have.
Pineapple Dish
Preheat Oven to 350 degrees.
Drain the juice from two 15/or/20 oz pineapple cans and throw in the bottom of a medium cassarole dish
mix together 1 cup sugar, 3/4 cup all purpose flower and 2 cups cheddar cheese (sharp). add to the top of the pineapple
crush a sleeve of ritz crackers layer over the very top
Melt a stick of butter - pour over the top of everything
Bake in the middle of the over for 30 minutes.
Serve and enjoy.
What's your favorite thing to drink when it's cold outside?
Hot apple cider with a cinnamon stick floating around. yum! I love warm drinks that soothe when the snow is falling and you need a scarf around your neck.

No-bake Peanut butter cookies hands down... but i can't post the recipe... b/c if Donita see it, the world as we know it will end.
For a full sit-down dinner with several guests, would you rather be the one cooking or do you prefer to just show up and eat?
I would rather be the one who cooks or helps cook. I love entertaining and I feel like it is something that I can bring to the table. And to prepare a meal for the people I love, that is one of the best gifts around. now I am off to do that exact thing! Merry Happy Wonderful Thanksgiving to everyone. I hope that it is a day around those you enjoy.

brussell sprouts! yum.... okay I am odd in that respect. but my sister makes some awesomely good brussell sprouts with pancetta.
I just enjoy being with family for the day also. it's a big highlight.
What's been your worst experience at a restaurant?
So glad you asked! I recently had lunch at a HORRIBLE place in Hendersonville, TN. the Italian Cafe and Grill, not good at all. We went there hoping to have a cheap yummy Italian lunch. Instead there was no service, the food was less than acceptable and it was way to much money for what was actually consumed.
We arrived a little after 12 for what we thought would be the lunch rush. It was dead and we had to wait over 5 minutes to see a waiter he just told us to sit "wherever" and then we asked about lunch menus and stated that we just wanted to get the buffet b/c we were in a rush. He indicated that would be good b/c that was all they had.
SO long story short, the food was not good, the salad had brown leaves in it. The pizza was soggy and the sauce was watery. and to top that all off we saw what we presumed to be either a cook or dishwasher coming out of the kitchen eating something. The waiter never checked in on us and just delivered the bill and left, we waited around for a bit to pay and ended up leaving our compiled cash on the table with a coupon we had as well. We were never able to ask about it, since he would never visit our table. We still payed the full amount, but his tip wasn't going to be a decent one unless the coupon applied. He chased us out into the parking lot and hollard "this coupon doesn't apply, but whatever"
Yea we will never ever ever go back to that place.
